In Montana, the wild huckleberry grows abundantly and deliciously! If you have never heard of this yummy goodness, you are missing out! Huckleberries cannot be cultivated, so you have to find them and they are worth the effort. I like to think of them as a ramped up version of a blueberry with a little extra smoothness and flavor. And just like the blueberry, if fed in moderation, they are perfectly safe for your dog. As this is a high calorie treat, please use moderation. Leftovers may be refrigerated for up to 3 days or frozen for up to 3 months.
1 cup warm, whole milk
2 tsps active dry yeast
1/4 cup local honey
1/4 cup olive oil
3 cups all purpose flour
1/2 cup huckleberry jam (no sugar OR artificial sweetener)
2 tablespoon olive oil
Warm the milk. Sprinkle the yeast and honey over the liquid, add the olive oil, and egg. Combine with the flour and mix on medium speed for 5 minutes, or by hand until the dough is smooth. Grease a large bowl with, form the dough into a ball and let sit in a warm place covered with plastic wrap for 90 minutes.
After letting sit, punch the dough down and roll it out on a slightly floured surface into a rectangle. Spread the jam and olive oil evenly. Lightly roll up like a carpet. Pinch the edge to seal it. Cover with plastic and let rise in a warm place for 40 minutes. Preheat oven to 350 degrees F. Bake for 30 minutes. Remove from the oven and let cool completely before serving to your dog.
