Sweet Mutt-Tato Peanut Butter Pie

Ingredients
1/4 cup garbanzo bean flour
1 tsp. baking powder
1 large egg, lightly beaten
3 cups cooked and pureed sweet potato
1/2 cup unsalted, no sugar added peanut butter
1 tsp. ground cinnamon
1 cup grated, no sugar added grated coconut
Garnish:
1/3 cup chopped, cooked turkey bacon
Preheat oven to 350 degrees F. Grease a pie pan with non-stick cooking spray. You can also use a muffin tin. Your choice!
Combine together the flour and baking powder in a small bowl.
In a medium bowl, mix together the beaten eggs, sweet potato, peanut butter and cinnamon until combined. Add the flour mixture and mix well.
Spread coconut shreds on bottom of pan. Spoon mixture over the top. Top with turkey bacon.
Bake for 20 to 25 minutes, or until the filling is set.
Let cool for 1 hour before serving. Never serve your dog hot food.
Cut into squares or slices!
