Lefse, Norwegian potato crepes, are popular in North Dakota. They are thin flatbreads cooked in a skillet until lightly browned, spread with butter and sugar and then rolled into a thin tube. Well, we decided to make these dog-friendly without the sugar and butter and by using organic, white sweet potatoes. Can dogs share with the persons? You betcha! And Digby and Brickle, well, they like theirs with a side of peanut butter for dipping.
2 pounds cooked, organic white sweet potatoes
1/2 cup low fat cottage cheese
2 tablespoons olive oil
2 cups organic, all-purpose flour
Cut the cooked sweet potatoes into small chunks and press through a ricer. If you don’t have a ricer, just mash with a fork! Take about 4 cups of the potatoes in a large bowl. Heat the cottage cheese and olive oil just until warm. Add to the potatoes and mix gently. Let the potato mixture cool down for about 30 minutes. Then, add the flour. Do not overwork the dough.
Take 2 tablespoons of the prepared dough and form into a ball and sprinkle with a little flour. Put onto wax paper and using a rolling pin, roll the dough into a very thin circle, about 7 inches wide.
Heat a large, non-stick skillet over medium heat. Gently peel off ball from parchment paper onto your hand. Place in skillet and cook on one side until brown specks start to appear, about one minute. Flip the dough and cook for another 30 seconds. Transfer the cooked lease to a plate and keep covered with a clean towel. Repeat with all remaining dough.
Makes about 30 lefse.
To reheat, warm it up quickly in a heated skillet.
May be refrigerated for up to 3 days or frozen for up to 2 months.
