When you think of Nevada, the Las Vegas Strip likely comes to mind. When it comes to food here, you can have your pick of any cuisine! Las Vegas is known for its lavish buffets. One of the most popular is found in Caesar’s Palace. There, you can have your choice of just about any type of miniature pancake. Now…for Digby, miniature isn’t his thing when he wants food. But here, we have controlled the portions, and included one of his favorite, dog friendly flavors, strawberry. Also, we have used kefir as the liquid for this pancake. Digby definitely won the jackpot on this Nevada inspired recipe!
1 cup organic, all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon organic molasses
1/2 cup chopped strawberries
1 tablespoon organic, ground flaxseed
1/2 cup organic kefir
Mix all dry ingredients together. Mix in wet ingredients and stir. Spray a non-stick skillet with organic cooking spray. When the skillet is hot, drop silver dollar sized spoonfuls onto the skillet. Flip when bubbles appear. Repeat until all batter is used. Let cool completely before serving to your dog. You may pour unsweetened cooked strawberries over the top for an extra bonus! Las Vegas is all about the bonus! Unused portions may be refrigerated for up to 3 days or frozen for up to 3 months.
