What is migas? There are different versions in different countries, but basically, migas is scrambled eggs with different vegetables and tortillas. The Texas version adds tomatoes and different spices to theirs.
As you probably know, dogs should not eat corn, so we are leaving the corn tortillas and hot peppers out of this dog-friendly version. But for texture, which is what we are going for here, we have added some fresh kale with a whole wheat tortilla. Tex-Mex versions vary greatly from other places, adding lots and lots of cheese. If you are ever in Texas, don’t miss the person version at any local, breakfast spot that is served with corn tortillas and refried beans. (Don’t give that to your dog)
Ingredients
- 1 cup fresh kale, uncooked
- 1 whole wheat tortilla chopped into rough pieces
- 1 whole plum Tomato, Roughly Chopped
- 1 whole green Pepper, Roughly Chopped
- 2 whole large Eggs
- 1/4 cup organic, skim milk mozzarella cheese
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon Olive Oil
- 2 tablespoon organic, skim milk
Directions
Take a non-stick skillet and spray with olive oil. Saute the whole wheat tortilla, kale, tomato, pepper and cilantro. In a bowl, whisk together the eggs and milk. Add to the skillet. Heat through, toss and serve! Let cool completely before giving to your dog.
